Coaldale Walnuts — Pickled Walnuts

Green walnuts picked young in Tasmania's Coal River Valley — before the shell hardens — and pickled whole in local cider vinegar with sugar and spice.

Why we love it: pickled walnuts are a near-extinct art, the kind of thing your great-grandmother would recognise and almost nobody makes anymore. Coaldale do them properly: soft, dark, sweet-sharp. Stilton's best friend, and shockingly good folded through mash.
