XO sauce, no shrimp required. Grown and made in Alphington — Melbourne oyster mushrooms cooked down with chilli, ginger and garlic until every spoonful lands umami-first. More than a jar's worth of fresh mushrooms goes into each jar: 160g of oyster mushrooms into 150g of sauce. Developed with local chefs during the lockdowns, made on the farm in small batches.
